Carmel Mountain Preschool Cowboy Bars snack chewy salty chocolaty gluten-free energy-boost recipe

When you’re looking for a chewy, salty, chocolatey, gluten free, energy boost, these are just the thing! Done in just 20 minutes, start to finish, you may want to make a double batch because they while they keep long, they go fast.

Ingredients

  • 2/3 C + 1/2 C oat flour (blast oats in a food processor or blender)
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 C white sugar
  • 1/4 C crushed pretzels
  • 2 Tbs rolled oats
  • 1/2 C chocolate chips
  • 1 1/4 tsp vanilla
  • 2 Tbs vegetable oil
  • 1/4 C milk

Preheat the oven to 380*F

In a large bowl, mix the first 8 ingredients well. Add the rest and press into a parchment lined pan. Bake for 8 minutes, remove and cut into squares. Let cool completely as they will finish firming up and be good to store! For chewy bars, store in plastic. For crisp bars, store in glass. Enjoy!
