Chocolate Pudding that Wins!

What makes this a winner? Chia!

Chia is a serious powerhouse of sustainable energy. Just 2 tablespoons contain 11 grams of fiber, 4 grams of protein, are a great source of omega-3 fatty acids and some minerals, essential for bone health, including calcium, phosphorus, and magnesium. This delicious pudding makes a great breakfast or dessert that everyone will enjoy!

Here is the recipe I made for the kids at school. The beauty is, it is versatile so feel free to adapt.

Ingredients

  • 1 1/2 Cups Whole Milk
  • 1/3 Cup Chia Seed
  • 1/4 Cup Unsweetened Cocoa Powder
  • 3 Tbs Maple Syrup
  • 3 Tbs Maple Syrup
  • 1/2 tsp Cinnamon
  • 1/2 Cup Vanilla Yogurt
  • 1/4 tsp sea salt

Process

Mix all ingredients, except yogurt and sweetener, together and place in fridge for at least 3 hours. I did this overnight.

If you are sensitive to fiber, use more yogurt to dilute the power of chia! If you need help with regularity, you can omit the yogurt all together and simply use a teaspoon of vanilla extract.

After the chill time, you’ll see the pudding sets into a gel like consistency. Blend with the yogurt and sweetener and enjoy! Try topped with whipped cream and berries or whatever toppings you like. Have fun!
