This dish is quick, versatile, and sweet with a low glycemic load. One of my favorite combinations! If you own a food processor, large organic carrots are the tastiest. If not, shredded organic is a time saver and a close second. So gather an armful’s worth of ingredients and let’s get started.
- 2 Cups shredded organic carrots
- ½ Cup organic California raisins
- 2 tsp tamari (organic soy sauce)
- 1 tsp organic honey
- 1 tsp organic sesame oil
This can be eaten on its own with crackers, or placed atop a bed of greens, in a grilled chicken sandwich, tossed with pasta, you name it! You will find the crunch factor is on point and the sweet/salty/savory flavor can easily transform an otherwise bland healthy meal.
