Mint “Chocolate Chip Cheesecake” Dip

Cheesecake Dip is a fun recipe for parties or just an after school snack.  The kids loved it, saying it looked like ice cream, and ate it all up. As a 90’s kid it reminded me of dunk-a-roos…but not nearly as bad for you.  These actually have a decent amount of nutrition, take a look and see the secret ingredients!

Ingredients for Cheesecake Dip:

Dip:

  • 1 Block Cream Cheese
  • 1/4 C Chia Seeds
  • 1/8 tsp Peppermint Extract OR 2 Tbs Chopped Mint
  • 1 drop Green Food Coloring

Icing:

  • 1/2 C White Sugar
  • 1/4 C Unsweetened Cocoa Powder
  • 2 Tbs Milk
  • 2 Tbs Butter
  • 1/2 tsp Vanilla Extract
  • 1 tsp Flax Seed Meal

Instructions:

Take the cream cheese out of the fridge and let it soften while you take care of other things, (the softer the better). Mine was out for over an hour, and it whipped up in the stand mixer nice and creamy with the chia seeds and mint!

Since the “chips” are actually chia seeds, I topped it off with a drizzle of icing to get the chocolate.  All you do is add all the ingredients in a saucepan and melt over medium heat. Then place in fridge until ready to serve! Dunking animal crackers is a bit hit and this is also a yummy spread on graham crackers like real cheesecake, or even in between chocolate wafers for a cookie sandwich (and you can skip the icing).
